Made keto bottomless egg roll in a bowl last night in an Instant Pot. (same as a pressure cooker)

This turned out damn good.

1 lb of boneless, skinless chicken thighs
2 TBS olive oil
2 cloves garlic
1 small onion
1 bunch green onions
1 bell pepper
1 bag of cut up cabbage/cole slaw mix
1 bag shredded carrots
rice wine
apple cider vinegar
soy sauce

Turn on instant pot to saute and add olive oil
Cut up your chicken into small bite size chunks - throw into the pot
Saute about 5 minutes.
Throw in onions, green onions, garlic and bell pepper
Add salt and pepper
Continue to saute and stir for about another 5 minutes, until outside of chicken turns white.
Add cole slaw mix and carrots
Add about 2-3 tablespoons of the rice win, apple cider vinegar and Soy Sauce
Put the lid on and cook under high pressure for 10 minutes.
Release the pressure

This version has almost zero carbs, makes several servings and reheats great.

Last night was easy but dang good

In a big pain wrapped in foil - fajita chicken, broccoli, shrooms, onion and alfredo sauce - stick in the oven for a bit and add parmesan after you pull out.
